By the time you go to eat this lemon chicken, it will be packed with lovely citrus flavors. It will have a slight hint of sweetness from the brown sugar and an extra bit of flavor from the herbs. It’s an excellent combination that will have you going back for seconds.

You should be able to feed roughly four to six people without making any changes to this recipe. However, I do recommend making some side dishes to go with the chicken.

Accompaniments to Serve with Lemon Chicken

Steamed rice is one of the best and easiest accompaniments to have with the chicken. It’s the perfect way to feed a few more people using a single batch of this recipe.

Some steamed or blanched vegetables go great with lemon chicken and help add a bit of variety to the plate. I like combining the chicken and vegetables with rice or noodles.

Tweaking this Recipe

There are a few tweaks that you can make to this recipe to make it more to your liking.

Some soy sauce or hoisin can be added to the sauce for a bit of extra depth and flavor. I recommend adding a tablespoon or two, but with that said, I think the sauce is perfect without any extra additions.

Vegetables such as carrots and mushrooms can be added straight into the slow cooker. They will add a bit more flavor to the lemon chicken and bulk the dish out a little. It’s a great way of feeding a crowd without making any drastic or expensive changes.

You can make the sauce creamy by adding half a cup of cream just before you add the cornstarch mixture. You will also want to use three tablespoons of cornstarch and water instead.

If you buy some chicken with the skin on, then you might want to crisp the skin before placing it in the slow cooker. You can also deglaze the frypan using white wine to get even more flavor into this dish.

Ingredients

  • 1 kg (2.2 lb) chicken thigh
  • 2 tsp garlic, crushed
  • ½ tsp oregano
  • 1 tsp parsley
  • 2 tsp brown sugar
  • 2 tsp lemon zest
  • 3 Tbsp lemon juice
  • 250 ml (8.5 fl oz) chicken stock
  • 125 ml (4.2 fl oz) white wine

Thickener

  • 2 Tbsp cornstarch
  • 2 Tbsp water

Instructions

  1. In a slow cooker, mix the garlic, oregano, parsley, brown sugar, lemon zest, lemon juice, chicken stock, and white wine.
  2. Add the chicken thigh and coat in the liquid.
  3. Cook on low for 6 hours.
  4. Remove the chicken from the slow cooker.
  5. Mix the cornstarch and water until it’s like a paste.
  6. Pour the cornstarch mixture into the slow cooker and stir until combined.
  7. Return the chicken to the slow cooker.
  8. Cook on high for 30 minutes or until the sauce is thickened.
  9. Serve & Enjoy.

Recipe Tips

  • The white wine adds more flavor but can be omitted if you don’t wish to use it.
  • You’re able to use other cuts of chicken such as chicken breast or chicken drumsticks.
  • I recommend using fresh lemon juice for the best results. However, bottled lemon juice will work fine if you can’t get your hands on any fresh lemons.

    This was SO good!

    I used chicken breasts, since that’s what I had, and served it over a bag of Lipton’s chicken flavored noodles. It was better than I even expected. I did not have wine, so maybe that’s why mine just needed a little pick me up. I added a few dashes of Himalayan pink salt. Next time, I will add some broccoli as well. I will make this again.
