Slow Cooker Banana Bread Recipe


Slow Cooker Banana Bread

Ingredients

  • ½ cup unsalted butter, softened
  • ¾ cup caster sugar
  • 2 eggs
  • 2 cups plain flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon, ground
  • ½ tsp salt
  • 1 tsp vanilla essence
  • 3 bananas, mashed

Instructions

  1. In a bowl, beat together the butter and sugar until pale.
  2. One by one beat in the eggs until well combined.
  3. Fold in the plain flour, baking powder, baking soda, cinnamon, salt, vanilla, and mashed bananas.
  4. Line the slow cooker with foil and lightly grease.
  5. Pour the mixture onto the foil.
  6. Cook on low for 4 hours or until completely cooked.
  7. Allow to cool slightly in the slow cooker before removing.
  8. Serve & Enjoy.

Recipe Tips

  • All slow cookers cook differently, so you might find yours will take longer to cook. For example, if you have a smaller slow cooker, it may take longer since the mixture will be less spread out.
  • Overripe bananas are the best to use as they will mash easily. This bread is also a great way to use up some bananas if you have too many.
  • If you know your bananas are a bit bland, you might want to increase the amount of sugar in the recipe to about one cup.
  • Doubling this recipe will add to the cooking time, I would add two to four hours onto the cooking time if you end up doing this.
  • Caster sugar is also known as superfine sugar or baker's sugar.
