There is one thing that I have always loved about making cakes and desserts in the slow cooker. That one thing is how incredibly hard it is to stuff up the recipe. Very rarely, I end up with burnt bread, puddings, and other dishes that can so quickly go wrong when you bake in a traditional oven.

You will get roughly sixteen servings out of a single batch of this banana bread. Personally, I can eat two servings, so you may find it will only be enough to feed six or eight people.

This bread will keep nicely for a few days before going stale. I recommend keeping it covered in the fridge for up to three to five days. You can also store it in the freezer. However, I am unsure how well it will keep.

Ingredients

  • ½ cup unsalted butter, softened
  • ¾ cup caster sugar
  • 2 eggs
  • 2 cups plain flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon, ground
  • ½ tsp salt
  • 1 tsp vanilla essence
  • 3 bananas, mashed

Instructions

  1. In a bowl, beat together the butter and sugar until pale.
  2. One by one beat in the eggs until well combined.
  3. Fold in the plain flour, baking powder, baking soda, cinnamon, salt, vanilla, and mashed bananas.
  4. Line the slow cooker with foil and lightly grease.
  5. Pour the mixture onto the foil.
  6. Cook on low for 4 hours or until completely cooked.
  7. Allow to cool slightly in the slow cooker before removing.
  8. Serve & Enjoy.

Recipe Tips

  • All slow cookers cook differently, so you might find yours will take longer to cook. For example, if you have a smaller slow cooker, it may take longer since the mixture will be less spread out.
  • Overripe bananas are the best to use as they will mash easily. This bread is also a great way to use up some bananas if you have too many.
  • If you know your bananas are a bit bland, you might want to increase the amount of sugar in the recipe to about one cup.
  • Doubling this recipe will add to the cooking time, I would add two to four hours onto the cooking time if you end up doing this.
  • Caster sugar is also known as superfine sugar or baker’s sugar.

    What is caster sugar ?? And how much difference will it make if I just use plain sugar? Thank you.

      I think it’s also known as superfine sugar but you can swap it out for just plain without any huge difference.

    Ok so I’m going make again it was delicious for some reason the nest day the top got wet yucky so we had to toss. Any ideas on what went wrong

      That’s strange, maybe too much condensation formed on the lid. Some people place a tea towel under the lid to stop it from getting too wet.

    Could not believe you could use your slow cooker to make this it is brilliant I added an extra egg as mine were small and made it with diabetic sweetener I added one small bag of chocolate chips. Cooked it about half an hour.

      Hi Graeme,

      That is disappointing to hear!

      It is possible your slow cooker cooks at a higher temperature than mine. Which might have resulted in the bread overcooking and forming a hard crust.
